Have you replaced all the folders and files (even the premium theme, make a backup of your theme.json)?

Yes, My installation goes by deflate the Zip File to a Folder (Local) rename that to FlatBoard.new, Upload that by FTP to my Hoster Rename FlatBoard to FlatBoard.old and Flatboard.new to FlatBoard.
The Plugins and Themes that are Part of the Zip File are not Part of the Backup. And the Settings for The Colors I transfer bei copying the Part in the theme.json vrom the Flatboard.old to the theme.json in FlatBoard.

So there should be no old File in the new Folder.

No, it says Pre-Final 23.01.2026. But I downloaded it yesterday in the Morning from the Download Page and installed it directly.

Just Downloaded and installed it, Now it Says 5.0.0-Final und 29.01.2026.
And the most important, The Categories work as expected.
